Robert Parekh is doing something on the Las Vegas Strip that no one else is doing—brewing beer. As the general manager for Trustworthy Brewing Co. inside The Grand Canal Shoppes on The Palazzo side, the restaurant and bar is also home to an onsite brewery.

“When the opportunity for Trustworthy arose, I thought, ‘Now I can translate my love for selling craft beer to potentially producing craft beer,’” says Parekh. Before he joined the company in 2019, Parekh had a long career in food and beverage, which began in the Bay Area in California.

He moved to Vegas in 2004 to expand his industry knowledge. Parekh’s resume is quite extensive and impressive—he’s helped launch lounges, build bar programs and served in management positions for spots including Rojo Lounge at Palms Place, PBR Rock Bar at Miracle Mile Shops, Diablo’s Cantina and The Pub (both were at the former Monte Carlo), Border Grill at Mandalay Bay and Tap Sports Bar at MGM Grand. When he got the call to see if he’d like to join Trustworthy, “I thought it would be a very fun, cool thing to do because by then I had developed a very strong passion for beer,” he says. “I’ve always had a strong beverage passion—mixology, cocktails, spirits; I’ve always leaned toward that.”

Not only does Parekh manage the day-to-day of the restaurant side of the operation, but you can also find him producing the beer that’s served at Trustworthy—and he’s a level two cicerone. “I fell in love with beverage, especially beer,” he says. “My passion has become about the beer, not just identifying styles and enjoying the flavor profiles but also the science and production behind it. As I’ve progressed in my career, I’ve found a lot of enjoyment not just in the daily interactions with staff and guests but also ... in the science behind the brewing process.”

Libation: Trustworthy IPA

This is Trustworthy Brewing Co.’s original beer, created in its main brewery in Burbank, Calif. “A lot of tropical, hop aroma on the nose and the body is going to finish really clean,” Parekh says. “Our IPA is one that you can drink and feel like you can have another one without it fatiguing your mouth. You get a good amount of hop bitterness on the finish.” If you’re a fan of traditional West Coast IPAs, you’ll love Trustworthy IPA. Another favorite, says Parekh, is the Las Vegas-brewed signature amber ale, A Year in the Making.
