Take a bump like a rock star! (Hey, not that type!) Caviar has gone rock ’n’ roll, with bumps of the delicacy (the hot new trend) now paired with live music, good times and impressive cocktails. Welcome to Caspian’s Rock & Roe at Caesars Palace.
“Caspian’s is a picturesque caviar bar in the front—we like to say, ‘Business in the front, party in the back,’” says Ryan Brunty, director of marketing for Caspian’s. “You experience this luxe food in the front lounge, and then hidden behind a picture of a captain is the door to an art deco-styled rock ’n’ roll club. The difference between the two is so striking; it makes it such a fun, memorable experience for people.”

Here, let’s talk about the rock ’n’ roll speakeasy. Once you step through the captain’s painting, you pick up a phone, ask to be let in and step into a wonderful world where nautical-themed luxury meets a Sunset Strip-type rock club. Plenty of seating is available; just make a reservation and the table is yours all night for a price. If you’d prefer to be right next to the stage so you can go gaga over the rock stars or you want to belly up to the bar, those are both considered general admission and are free. (There is never a cover at Caspian’s.)
What about taking those bumps? Bumps of caviar (a small amount of the delicacy is placed in the hand, which helps warm it up and release the flavors) and small plates like mini Maine lobster rolls with caviar, crabby caviar tacos and deviled eggs with caviar are available if you need a little nosh. “Caviar is a luxury food, but we wanted to make it approachable for people—we’re doing it in a way that is not intimidating,” Brunty says. “Food here is phenomenal, and I’m not just saying that because I work here. We have a Michelin-star chef. It really is next level.”
The cocktails are also the star of the show. A carefully curated menu of unique, showy cocktails adds to the Caspian’s experience. “We wanted to create these drinks that are fun and engaging, delicious, and (that) people will want to post to their social media,” Brunty says. Three standout stars include the Feet in the Sand with Patron Silver coconut-washed tequila, Cointreau, banana liqueur, orgeat, lemon, lime, bitters and a totally delicious toasted coconut sugar rim; “Fig”ure of Your Imagination with Makers Mark bourbon, Cointreau, fig jam, honey and lemon; and the Pear-fecta with Grey Goose La Poire vodka, cucumber, thyme syrup and lemon. Caspian’s also offers unique mocktails, bottle service, champagnes, wines, beer and classic cocktails. The negroni, espresso martini, Moscow mule, Pornstar martini, paloma and more—don’t pass these up, as Caspian’s nails it when it comes to re-creating the classics; and every classic cocktail can get a bump-up in excess by adding caviar-stuffed olives.

With cocktail and caviar in hand, rock out to a rotating roster of bands. Past nights have seen Sammy Hagar and members from Lifehouse and Savage Garden perform, and even singer Macy Gray has stopped by and jumped onstage to do her rendition of “Creep” by Radiohead. “You never know who is going to drop in,” Brunty says. “You can see a rock ’n’ roll band onstage with caviar in your hand. It just really creates a fun experience for people that you can’t get anywhere else on the Strip in this capacity. At the end of the day, we’re a rock ’n’ roll club. It’s all about the rock and getting rowdy. That’s what our brand is about.” –Kiko Miyasato

• Enjoy live music Tuesday through Saturday. There is an acoustic opener at 8 p.m., with the rock headliners taking the stage at 10:30 p.m.
• Enjoy Caviar Karaoke every Thursday. Live music starts at 8 p.m. and karaoke starts at 10:30 p.m. Those brave enough to take the stage can sing karaoke backed by a live band.
• Caviar goes high-brow/low-brow with the Caspian’s Chips & Dip. French onion dip is paired with white Sturgeon caviar and a lil’ can of Pringles potato chips.
• Order the popular A Bump & A Shot, a shot of chilled Belvedere vodka and a mother of pearl spoon with a bump of caviar. If you’re with a group, go for the Caspian’s Royal Flight with six Belvedere shots paired with a 1-ounce tin of Imperial golden osetra caviar.
