Eggplant stacked and Steve Martorano’s world-famous meatball should be ordered for the table. Prepare for a party atmosphere after 8 p.m., when a DJ starts spinning old-school R&B, disco, slow jams and classic rock.

The Eiffel Tower Restaurant provides one of the pre-eminent vistas of the Strip from high altitude, and the romantic environment is the scene of a marriage proposal just about every night that the restaurant is open. The elevator doors open to chef J. Joho’s immaculate kitchen, where his staff expertly prepares specialties such as foie gras torchon, roast rack of lamb and Rossini-style filet mignon with truffle sauce.
