One of the best things about living in a city with so many restaurants are the crazy number of new dishes that get added to menus with every change of season, taking advantage of the freshest ingredients (not much frozen here unless it’s ice cream).

At Emeril’s New Orleans Fish House in MGM Grand, you’ll find the spring menu is in full swing at the celebrity chef Emeril Lagasse’s revered Vegas location. Ken Lum, chef de cuisine at Emeril’s, has created a number of new additions and tweaks to the menu. If you’re in for dinner, try seared scallops and spaghetti with heirloom tomatoes and a pistachio basil pesto; Spanish octopus a la plancha (griddled) with cucumber relish, heirloom tomatoes and aguachile; or a kurobuta pork chop, grilled with pea shoots and served with adobo jus. To get really adventurous, order the Hawaiian ahi poke with dynamite sauce and sweet potato chips; or Creole crab meat remoulade and fried okra salad.

Of course, you can still get delicious Emeril dishes like the barbecue shrimp starter with a rosemary biscuit, Louisiana-style broiled oysters and crab cakes. The seafood tower will let you get your fill of oysters, shrimp, lobster and Alaskan king crab legs. Don’t forget to order a cocktail to start with, too, like the smoked maple margarita, with Montezuma blanco tequila and barrel-smoked maple syrup.

A popular entrée is the Creole seafood boil, with tons of stuff like mussels, clams, jumbo shrimp, Andouille sausage and corn. Grab gumbo to start, and then maybe move on to the Carolina Gold jambalaya with jumbo Gulf shrimp and Andouille sausage. Cedar-plank grilled New Zealand salmon has been a staple on menus for many years now for good reason, and with Emeril’s Worcestershire sauce, has a classic twist. Fried chicken is a Southern staple, so of course you’ll find it here, as well a 16-ounce Creekstone Farms ribeye.

And dessert is sometimes overlooked, but not by us. Emeril’s banana cream pie is a legend in the office! And as long as you’re ordering dessert, go ahead and give in to the suggested wine pairings, such as a Donnafugata Ben Rye passito di Pantelleria for the pie, or the Vidal Inniskillin ice wine from Canada with the Bread & Butter bread pudding, served with bourbon crème anglaise.

Or indulge in a dessert drink and forget the dessert itself—it’ll surely make your night even that much more special. A favorite is the Irish coffee with Jameson’s‚ but the Birthday Cake martini is made with Burnett’s Whipped Cream vodka, Frangelico liqueur and even comes with sprinkles and a candle! Yummy!
