Times and tastes may change, but the pleasure of experiencing Piero’s Italian Cuisine remains the same as when Freddie Glusman opened the restaurant’s original incarnation four decades ago. Glusman found the ideal off-Strip address in 1987 at Piero’s current location across from the Las Vegas Convention Center, and has been serving classic fare to classy clientele ever since. Now under the supervision of Freddie’s son Evan Glusman, Piero’s became as legendary for its celebrity patrons as it was for its 1980s atmosphere, which served director Martin Scorsese’s wish for authenticity so well in Casino.

Menu items originated by chef Gilbert Fetaz, who started only weeks after the restaurant opened and retired in 2019, have been served to Frank Sinatra, George W. Bush, Bill Clinton, Steve Lawrence and Eydie Gormé, and Don Rickles, who roasted Freddie for his birthday. The restaurateur’s appreciation for Pia Zadora led to the singer regularly performing at Piero’s, which as of late has become a place to spot Golden Knights and Raiders players as well as pro sports dignitaries such as Mark Davis. The current generation of diners makes connections to the past via pasta fagioli, pollo parmigiana, housemade ravioli and baked ziti, dishes that continue to be prepared with the utmost reverence for excellence and tradition.
