One of downtown Las Vegas’ best Mexican restaurants, Peyote, has added several new dishes to an already stellar lineup, courtesy of executive chefs Daniel Arias and Isidro Marquez-Castillo. The location—inside Ferguson’s Downtown—offers plenty of indoor and open-air seating and people-watching as you sample summer flavors and ingredients in cocktails like the Guavacito, crafted with rum, Cocchi Americano, guava, hibiscus, lavender and lime, or the Dilly Wabbit, containing dill-infused 400 Conejos mezcal, carrot, lemon and aquavit.

Elsewhere on the menu, which emphasizes from-scratch dishes with Latin influences, enjoy entrées like fish of the day “Al Mojo,” prepared on plancha and topped with green mojo sauce and crispy garlic, roasted salsa and guacamole; cauliflower steak, made with roasted cauliflower, citrus herb marinade, pickled onions, Mexican romesco sauce and dried cherries; a 7-ounce flat iron steak, served with a cheese-stuffed Anaheim chili and grilled green onions; or agua suave fish ceviche, a combination of the fish of the day with epazote lime dressing, onions, tomato, avocado, cucumber and salsa bendita.
