As if the notion of brunch with great views wasn’t enticing enough, the Stripside Alexxa’s at Paris Las Vegas recently introduced a number of new dishes, which makes the whole shebang even better.

For many people, brunch starts with a drink, like bottomless mimosas, of which the restaurant has three varieties: pineapple, cranberry and trusty orange. That’s accompanied by another traditional brunch favorite, the Bloody Mary. There are also three Bloody Mary varieties here: The Roman, with house-made spicy vodka, celery, lime, tomato, a spicy filthy olive and celery, you know, the whole salad; the Farmer’s Market, which goes it one better with bacon-infused gin, bacon and cheese; and The Colossal, a monster of a Mary with basil-infused vodka, king crab leg, peppered bacon, pickled peppers, okra, tomato, olive … the ingredients just keep coming. If you tend to get a little peckish before your starters, this is for you!

For those starters, I recommend the hummus. It comes with balloon bread, a light, puffed-up round of baked dough that works perfectly for chickpea dip, accented by garlic, lemon and za’atar, a spice blend that teases your tongue. Grilled banana bread with orange marmalade and brown sugar butter is as decadent as it sounds. Opt for a salad—the traditional caprese with tomatoes and burrata is a solid choice, as is the BLT, a take on a wedge with gem lettuce, bacon, blue cheese crumbles and heirloom cherry tomatoes.

Time for full-on brunch mode: classic chicken and waffles with bourbon maple syrup; a stack of pancakes covered in blueberry compote, butter and Chantilly cream; and huevos rancheros, where your over-easy eggs are accompanied by chicken, black beans, tortilla, pico de gallo, queso fresco—just all of the good stuff. Alexxa’s Cinnaroll waffle has been on the menu for years now, and with good reason. If you’re wondering if this waffle really tastes like a cinnamon bun, my answer is, yes! It’s covered in blueberries, raspberries and candied pecans, plus cream cheese frosting for that extra touch.

I’ve never been a huge grits fan, but that standoffishness ended when I tried Alexxa’s, deceptively simple using white, stone-milled grits, white cheddar, Cajun seasoning and chives, combining for a super creamy mouthful. They are on the menu as shrimp & grits with Cajun-seasoned black tiger shrimp and bacon, so imagine that.

The veggie omelet comes stuffed with spinach, tomato, onions, peppers and mushrooms—it’s like it was designed with all my favorite foods. And of course, breakfast potatoes on the side. Other options include a meat-lovers omelet with bacon, sausage and Italian ham, and the signature omelet with blue crab and asparagus. If you prefer a more lunch-y option, the margherita pizza is super flavorful, with fresh mozz and roasted tomatoes.

One of my favorite tricks at breakfast is to order French toast for dessert. Here, the brioche French toast is covered in a wild berry coulis and powdered sugar. Pour on the syrup! You can take it.
