The dining scene in Las Vegas continues to evolve with the opening of Harvest by Roy Ellamar at Bellagio, a restaurant focusing on seasonally inspired cuisine and a market-driven menu.

Vegetarian? Prepare to be overwhelmed by Ellamar’s fresh-picked produce in everything from the farmer’s salad with sunchokes, carrots and goat cheese vinaigrette to charred Brussels sprouts served with sweet maple syrup and bourbon soy sauce. For meat lovers, Harvest offers a grilled pork cheek, served with apple purée, miso glaze and apple kimchee, and duck confit buns stuffed with foie gras and sour pickled radish and served with kumquat preserves.

Whatever you do, don’t pass up the chance to sample what’s on the “snack wagon,” a traveling cart with everything from smoked salmon belly dip to broccoli raab pesto. There’s also raw bites, including Painted Hills hanger steak tartare, Chioggia Beet and Agedashi tofu.
