Looking for a special, seasonal dining experience on the Strip? Head straight to Matteo’s Ristorante Italiano. With a concentration on unique Northern Italian cuisine, chef Angelo Auriana presents fall and winter flavors like pumpkin, root vegetables and deep flavors, but the real special is the white truffle menu, available now through Dec. 31.

The Italian white truffle, known as tartufo bianco d’Alba, is found in the Alba region of Italy from October through December. Auriana handpicks the truffles from some of Italy’s most-respected exporters and presents the truffle’s earthy pungent flavors through a special tasting menu. It includes starters like a scrambled fertile egg on toasted brioche or melted Alpine cheese on a polenta crostini. Then there’s a pasta course that includes a risotto al tartufo with veal jus or a hand-cut egg pasta with creamy butter sauce. A meat course includes carne cruda albese—a raw, finely chopped beef with oil dressing and sea salt—or the filet medallions with seared foie gras and a truffle jus. End the decadent experience with the unique honey truffle-infused panna cotta with almond streusel and poached pears.
