And now through May 31, a visit to The Vault goes next-level when it welcomes The Aviary—an award-winning Chicago-based bar—for an exclusive cocktail residency.
The Aviary is acclaimed for its art of cocktailing—libations with over-the-top, theatrical presentations and recipes that mix spirits with out-of-the-ordinary ingredients. Paired with The Vault’s reputation for innovative cocktail making and its own stunning presentations, the collaboration of the two bars promises an unforgettable experience.
Reservations can be made online for seatings Wednesday through Sunday and includes a cocktail flight of three of The Aviary’s celebrated, visually striking, signature offerings from its Chicago menu paired with specially created small bites.
Guests are encouraged to browse The Aviary’s other classic cocktail offerings along with The Vault’s regular menu of cocktails. We suggest trying The Aviary’s Jungle Bird cocktail, a layered, rum-based cocktail that uses scientific techniques to create a unique sip; then move on The Vault’s choices like the Passion’s Serenade. This cocktail is concocted with toasted sesame-infused chocolate rum, passion fruit, vanilla, mint and coconut milk (frozen to the side of the glass), then topped with a Fresno chili. Each sip, as the coconut milk melts and the chili seeps, is a new flavor.
